This position is responsible to rotate amongst the following jobs: -Gutting. Using a handknife, eviscerate the carcass by making a horizontal cut on the diaphragm. The incumbent of this position must make sure that the organs are kept intact to prevent ccontamination of the carcass from ingesta and/or fecal material -Bunging. Using a powered hand tool, a round hole is cut around the rectum. The powered tool must be sanitized between each carcass for food safety.
